SAVE this recipe for this #glutenfree haloumi salad courtesy of our friend at @doctorbowl. INGREDIENTS 〰️ 300g halloumi, cubed 〰️ 2 tbsp hot honey 〰️ 1 tsp chilli flakes 〰️ 570g chickpeas 〰️ 1 tsp paprika 〰️ 1/2 cucumber, finely chopped 〰️ 3 beef tomatoes, finely chopped 〰️ 1/2 red onion, finely chopped 〰️ 1 yellow pepper, finely chopped 〰️ Large handful of coriander, finely chopped Dressing 〰️ Juice of 1 lemon 〰️ 1 tbsp honey 〰️ 2 tbsp extra virgin olive oil 〰️ Salt and pepper to taste METHOD 1. Over medium heat some oil in a pan. Once hot, add halloumi, hot honey and chilli flakes. Cook until golden brown, around 5 minutes 2. Preheat oven to 200c. Rinse and drain chickpeas. Pat dry. Add to a prepared baking tray along with some oil, salt and paprika. Roast for 30 minutes until crispy 3. Make a dressing by mixing ingredients in a small bowl. 4. Chop your salad and coriander, and add to a large bowl, along with the halloumi and chickpeas 5. Pour over the dressing and mix well.
