These are melting leeks, and they're called that because they literally melt in your mouth. This recipe looks so impressive, but it's actually easy to make. Start by searing leeks until they're golden brown on both sides. Add in lots of butter, garlic, thyme, and rosemary, and baste the leeks so the flavor soaks into every layer. Pour in beef stock and then pop them in the oven until they're soft enough to cut with a fork. They're super flavorful, but the mild, slightly sweet leek flavor still really shines through.
