ingredients ⬇️:
3/4 cup oats
2 eggs
1/2 cup cottage cheese
2 teaspoons baking powder
optional: 2 tbsps monk fruit sweetener (if you like your pancakes slightly sweet)
optional: vanilla extract
directions⬇️:
blend together the oats, eggs, cottage cheese, and remaining ingredients.
pour about 1/4 cup of the batter onto a heated pan.
let cook for 30-45 seconds or until the top of the pancake begins to bubble.
flip and cook for an additional 30 seconds to a minute.
repeat until all pancakes are cooked.
