Red Wine Pot Roast is one my favorites.

* Cut a 3-4lb chuck roast into chunks, seasoning with salt on all sides
* In a large dutch oven over medium high heat, brown the chuck roast on all sides and then set aside
* Sauté 1 diced onion and 6 cloves garlic until fragrant (about 1 minute)
* Add 1 tsp Italian seasoning, 1 tsp thyme and 1 tsp rosemary and 1/3 cup tomato paste. Continue to stir for 1-2 minutes
* Deglaze the pot with 2 cups of red wine and then add 2 cups of beef broth (I added 1 extra cup of beef broth to cover the meat before cooking. You might need to as well)
* Add 1 onion, cut into quarters, 2 cups of carrots, 6 whole cloves garlic, 2 rosemary sprigs and 2 bay leaves
* Cover with a lid and place in the oven at 350° for 3-4 hours until the meat is fall apart tender
* Serve with mashed potatoes and enjoy!

Red wine pot roast is one of my favorite dishes to make in the fall, and this one is so good. First, we're gonna cut a chuck roast into large cubes, and we're gonna sear it in a Dutch oven so that it's nice and brown on all sides. Remove the beef, and then we're gonna saute some onions and garlic before adding in some seasoning and tomato paste, giving that a stir before adding in red wine, chicken broth, and our meat back in. We're gonna add in carrots, onions, garlic, and some fresh rosemary, placing that in the oven until it's nice and tender and it shreds apart like this.
