This is one of the best meals I've made this month. It totally got me out of a cooking rut and it's so easy. Use the Thai peanut satay sauce from Trader Joe's with a clove of grated garlic. Add those two things to a pound of thinly sliced chicken breast. Let it marinate for a minute. Once that chicken is nice and caramelized, put it on some rice noodles. I like a little cucumber salad with a bunch of fresh herbs and then add some water to your remaining sauce so it gets nice and smooth and drizzle-able. You can squeeze a little lime over the top if you want. Can't stop thinking about it. It's so good.
