1/2 large Watermelon (6ish cups)
1 1/2 cups Persian or English cucumbers
1/4 cup chopped Mint
1/4 cup chopped Basil
1 cup feta
1/4 cup red wine vinegar
1/4 cup EVOO
Zest & juice of 1 lime
Salt and pepper to taste

Summer is here, so it's time to bring back one of my favorite salads. Watermelon, of course, is phenomenal by itself, but my friends request this for every cookout because they say it's changed the way they eat watermelon. I completely shaved down my watermelon. I'm just cutting it horizontally. Now vertically. Rotate. Vertically again, and you got perfect little cubes. Throw that into a bowl. Toast test here and there. Thinly slice some red onion, cucumber, basil. Roll it up. Nice thin slices. Then you get those long basil ribbons. Same thing with some mint. Crumble some feta. Red wine vinegar. Extra virgin olive oil. Lots and lots of pepper. And salt. Lime zest. And lime juice. With patience, give that a really good toss. You know when music brings back memories? Food brings back memories for me, and this just reminds me of a great summer last year. Little more basil and mint razzle dazzle. And that is it. I did not invent this combo, but I swear it is magical. First bite, bestie. Little bit of everything. As this sits, it's just gonna get better and better. Mm.
