Enoki mushrooms are one of my favorites. The texture is just fantastic and it's amazing in so many Asian recipes. Today I'm recreating a Japanese dish I love by rolling a small bunch of mushrooms in thinly sliced beef. I just go to an Asian grocery store and get hotpot or shabu shabu beef to get them pre-sliced like this. You then pan fry some onions until crisp tender, then place the rolls in a single layer in the pan and cook with the flavor-packed sauce until the beef is browned. Drizzle whisked eggs on top and heat until cooked through and you have the most delicious and tender enoki beef rolls. I like to serve them with warm white rice. Don't forget to drizzle the amazing broth on top to get all the flavors. And the whole thing takes just 20 minutes and even my kids love this dish.
