Creamy One-Skillet White Lasagna
SERVES 4 | 586 cals | 38g protein | 43g carbs | 28g fat (per serve)
Ingredients: 1 large chicken breast (300g), ½ tbsp avocado oil, 1/4 cup water, 2 tbsp butter, 1 small onion (diced), 1 tbsp garlic, 1 cup sliced mushrooms, 1½ cups chopped broccoli, 3 tbsp plain flour, 600ml chicken stock, 120g cottage cheese, 150g light cream cheese, 200g fresh lasagna sheets (cut into strips), 130g mozzarella, 40g parmesan, 1 tbsp Italian herbs, salt & pepper.
Steps: Slice chicken in half, pan-fry both sides (5–6 mins), shred + set aside. Deglaze pan, sauté onion, garlic, mushrooms in butter. Add flour, then stock, cheeses, and herbs. Add broccoli + lasagna sheets, stir to separate. Cover + simmer 6–7 mins, uncover + simmer 4–6 mins more to thicken. Stir in chicken + parmesan, top with mozzarella, grill 3–5 mins.

Did you know if you pan fry chicken and set it aside, pour in water to deglaze the pan, add butter, onion and garlic, sauté and stir in your flour, don't forget your mushrooms like I did, add stock, cottage cheese, cream cheese and herbs, add broccoli and lasagna sheets, cover, simmer and add parmesan cheese, shred your chicken and stir it back in. Top with cheese and pop it under the grill. You get this creamy, high-protein, white lasagna that feels like comfort food without blowing your calories.
