CREAMY COTTAGE CHEESE MAC N’ CHEESE
(serves 4) 350 cal / 22 g protein
8 oz. pasta shells • 1 cup cottage cheese • 1 cup milk • 1 cup shredded white cheddar cheese (+ 1/2 cup extra to stir in at the end, optional) • 1/2 tsp. garlic salt • 1 tbsp. cornstarch •
1. cook pasta shells to al dente. drain but don’t rinse
2. in a blender, combine cottage cheese, milk, cheddar, garlic salt, and cornstarch. blend until smooth.
3. add sauce to the same pot the pasta was cooked in and heat until a simmer is reached. cook until thick and creamy, about 5 minutes.
4. add noodles to the sauce (or sauce to noodles), stir in additional cheddar if using and enjoy!
