I was so skeptical of this before, but now I'm a believer. Pork back pineapple ribs. I'm taking off the silver skin using a paper towel. It makes it super easy. And then I'm combining smoked paprika, garlic powder, chili powder, cayenne, brown sugar, salt and pepper to make this rub. Then I'm gonna rub one out, make sure the rack is fully coated, add some barbecue sauce to a container and submerge the pineapple. Then I'm gonna take the rack, wrap it around the pineapple and secure it with some wooden skewers. Then I'm gonna take the aluminum foil and wrap it around the rack just until it goes halfway up the crown. Bake that at 275 for three and a half hours. I know it's long, but this was actually incredible, okay? I don't know what I like better, the ribs or the actual pineapple. It gave it sort of like a sweet and spicy flavor profile. I took the excess liquid, coated the entire thing, garnished it with green onions. You have to try this. Trust me, it was incredible. Oh my goodness.
