Creamy Spinach & Tomato Tortellini
-1 lb tortellini
-1 tbsp olive oil
-1 shallot, finely diced
-1 tsp minced garlic
-2 cups cherry or grape tomatoes
-1 cup roasted red pepper, chopped
-1 tbsp tomato paste
-3/4 cup heavy cream
-1/2 cup parmesan cheese
-1 cup spinach, chopped
-salt & pepper to taste
1. Boil the tortellini in a large pot of
salted water according to package
instructions.
2. In a large skillet over medium heat, heat olive oil and sauté the diced shallot until fragrant, about 3 minutes. Add the garlic and cook for 2 minutes.
3. Add tomatoes and roasted red
peppers to the skillet, cooking for 5 minutes.
4. Stir in tomato paste and heavy
cream.
5. Once tomatoes are soft, gently
smush them to release their juices.
6. Incorporate cheese, salt, and
pepper into the mixture, blending the ingredients.
7. Add chopped spinach and mix well.
8. Combine the cooked tortellini with the sauce in the skillet. Sprinkle more cheese on top before serving.
