ONE PAN DUMPLING SOUP (TOFU EDITION) 🥟 Follow @vegan_punks for everything tofu + grab the recipe below.
Some food trends are actually worth making, and we’ve gotta give it to the one pan dumpling soup that’s been doing the rounds - it’s good (and we’re biased, but we’d say even better with the tofu base).
It’s probably the easiest recipe you’re going to make, with most of the hard work being done by the shop-bought curry paste and dumplings.
And if you’re in the UK, we’d recommend the @itsuofficial vegetable fusion gyoza - they happen to have tofu and soya mince in, and taste amazing (and this is not an ad, we’re just obsessed).
Ingredients (serves 2)
20 shop-bought dumplings (we used @itsuofficial)
2 tbsp Thai red curry paste (we’re all about @thaitasteuk)
1 tbsp light soy sauce
1 tsp brown sugar
300 g silken tofu
250 ml vegan chicken or vegetable stock
2 cloves garlic
1 inch piece fresh ginger
To serve:
Spring onions
Sesame seeds
Chilli crisp
Instructions
1. Add the silken tofu, garlic and ginger to a blender, then blend until smooth and creamy.
2. In a large oven dish, add red curry paste, soy sauce, brown sugar, stock and the blended silken tofu mix. Whisk until smooth and creamy. Note: it may look curdled at first, but it will come together if you whisk for a little longer.
3. Pop in the gyoza so they’re all pretty much submerged in the broth.
4. Bake at 190°C for around 20–25 minutes, until the broth thickens slightly and the gyoza are fully cooked through.
5. Top with sliced spring onions, sesame seeds, fresh coriander and crispy chilli oil before serving.

I don't wanna say you've been doing it wrong, but I will say that I tried the one pan dumpling soup with coconut milk and I tried it with blended silken tofu and the silken tofu one was better and actually kept me full because it added a chunk of protein. And this is one of those food trends that is actually worth making because once you've whipped together your soup and dropped your shop bought dumplings in, you can pop it in the oven, sit back and put your feet up for 20 minutes and that's it, lunch is served.
