This bowl is pure comfort with a kick 🍜💥 Serves 4 You’ll Need: For the broth • 1 tbsp veg oil • 1 tbsp chilli crisp • 4 garlic cloves, 2-inch ginger • Zest & juice of 1 lime • 6 spring onions (whites & greens separated) • 2 tbsp miso, 3 tbsp peanut butter, 3 tbsp tahini • 2 tbsp maple syrup, 1 tbsp rice vinegar • 400ml coconut milk, 750ml veg stock • 2 tbsp soy sauce, 1 tsp vegan fish sauce • Salt, pepper, sugar to taste • 4 x 100g ramen noodle packs For the tofu crumbles • 225g smoked tofu • 2 tbsp veg oil, 1 tbsp soy sauce • 1 tsp smoked paprika, 1 tsp liquid smoke (optional) • 1 tsp chilli oil Garnish: • Chilli crisp, black sesame seeds, toasted sesame oil, fresh coriander How to Make It: 1️⃣ Start the broth – Fry garlic, ginger, spring onion whites & lime zest in oil + chilli crisp. Add miso, peanut butter, tahini, syrup & vinegar. Stir in coconut milk & veg stock. Simmer & season with soy, fish sauce, lime juice, salt, sugar. 2️⃣ Crisp the tofu – Crumble tofu into a hot pan with oil. Fry till golden, add soy, paprika, chilli oil & liquid smoke. Stir to coat. 3️⃣ Cook the noodles – Boil ramen noodles (ditch the flavour sachets), then drain. 4️⃣ Assemble – Divide noodles into bowls. Pour in broth. Top with tofu crumbles, spring onion greens, sesame seeds, chilli crisp, sesame oil & coriander. Creamy, dreamy, delicious. Save this video right now because this is a recipe that should be on your weekly dinner rotation. It's ridiculously simple, really quick and super easy to personalise. The flavourful, creamy, soupy noodles will make for a delicious midweek dinner again and again. We topped our soup with delicious crispy smoked tofu for a good hit of protein and a nice contrasting texture. But you could easily load yours up with griddled veggies, edamame or toasted cashews.
