@kalejunkie BAKED SALMON CRUNCHY RICE PAPER BOATS! 🚤 I took my viral baked salmon sushi cups and turned them into these little boats and they turned out so so good—the perfect easy and delicious dinner!! These are also fantastic to serve at a get together/party since the crunchy rice paper boats are sturdy and don’t get soggy! SO FUN TO EAT!
Makes 4 servings
SALMON
1 1/2 lbs salmon, skin removed and cubed
3 tb soy sauce or coconut aminos
3 tb kewpie mayo
2 tb rice vinegar
1 tb avocado oil
1 tb sriracha
CUCUMBER SALAD
3 persian cucumbers, chopped
3 green onions, chopped
2 tsp rice vinegar
12 rice paper wraps, quartered
1 cup avocado oil
1/4 cup ponzu sauce (optional)
Garnish: black sesame seeds
Turn your broiler on high. Add the cubed salmon, soy sauce, mayo, vinegar, oil and sriracha to a bowl. Mix and coat everything well. Transfer to a baking sheet in an even layer. Broil for 8-9 minutes until browned on top. Remove from oven and set aside. To make the cucumber salad, chop the cucumbers and green onions and toss with rice vinegar. Set aside. Next, cut the rice paper into quarters. Add the avocado oil to a large skillet over high heat. You need to wait for the oil to get extremely HOT before adding the rice paper; approximately 5 minutes. You can test the heat by dropping one of the rice paper sheets in the oil. When it is hot enough, the rice paper will shrivel up as shown in the video! If it doesn’t, wait a few minutes longer. Once you are ready take two quarters of the rice paper and stack on top of the other and drop in the oil —the two layers will make these sturdy! Place in the oil and immediately pull them out once they crisp up. Repeat until your rice paper is done. Let cool then fill with baked salmon, cucumber salad, and a drizzle of ponzu sauce (if using). Garnish with sesame seeds if desired and ENJOY!
